Peanut Butter Granola Thins

Ingredients

  • 2 cups old fashioned oats
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Kosher Salt
  • 1 Cup Creamy Peanut Butter
  • 1/4 cup Honey
  • 1/3 cup natural applesauce (no sugar added)
  • 1 tsp vanilla extract (liquid)
  • 1/4 cup roasted, salted peanuts, chopped
  • 1/c cup chocolate chips (optional)
  • 1/4 cup unsweetened coconut flakes

Directions

  1. In a medium mixing bowl, add oats, cinnamon, salt and stir until all the ingredients are combined.
  2. In another mixing bowl, mix the peanut butter, honey, applesauce and vanilla. Stir until well combined.
  3. Add the oat mixture, chopped peanuts, optional chocolate chips and coconut flakes into the peanut butter mixture and stir until you create a stiff batter.
  4. Line a baking sheet with parchment paper and add the mixture and spread evenly with a wooden spatula.  Place another parchment paper over the mixture. Using your hands, pack the mixture down firmly to the desired thickness.
  5. Freeze the mixture for at least 2 hours to overnight.  When ready, slice and wrap individually to be enjoyed.
