Doughnut Shaped Frittata

Yields 18 Doughnuts

Ingredients

  • 6 whole large eggs
  • 6 large egg whites
  • 1/3 cup light sour cream
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper
  • 1 medium yellow onion, finely diced (optional)
  • 1 large red or yellow pepper, finely chopped
  • 3/4 cup reduced-fat shredded sharp cheddar cheese

Directions

  1. Preheat the oven to 350 degrees.  Mist the doughnut or muffin tin with avocado or olive oil spray.
  2. Saute the chopped onion and bell pepper in olive oil or avocado oil for 5-7 minutes and set aside.
  3. In a mixing bowl, add the eggs, egg whites and sour cream and blend using a whisk.  Add salt and pepper.
  4. Add the sauteed vegetables into your egg mixture and stir. Add the shredded cheese and pour the batter into the tin and bake in the over for about 20 minutes.
  5. Carefully remove from the tins and enjoy 🙂
