Doughnut Shaped Frittata
Yields 18 Doughnuts
Ingredients
- 6 whole large eggs
- 6 large egg whites
- 1/3 cup light sour cream
- 1/4 tsp Kosher salt
- 1/4 tsp Ground black pepper
- 1 medium yellow onion, finely diced (optional)
- 1 large red or yellow pepper, finely chopped
- 3/4 cup reduced-fat shredded sharp cheddar cheese
Directions
- Preheat the oven to 350 degrees. Mist the doughnut or muffin tin with avocado or olive oil spray.
- Saute the chopped onion and bell pepper in olive oil or avocado oil for 5-7 minutes and set aside.
- In a mixing bowl, add the eggs, egg whites and sour cream and blend using a whisk. Add salt and pepper.
- Add the sauteed vegetables into your egg mixture and stir. Add the shredded cheese and pour the batter into the tin and bake in the over for about 20 minutes.
- Carefully remove from the tins and enjoy 🙂
