Taco-roni and cheese

Ingredients

  • 1 pound elbow macaroni pasta
  • 1 pound organic ground turkey
  • 1 cup diced tomatoes
  • 1/c taco seasoning
  • 1/4 tsp of each: cumin, ground garlic, paprika
  • 1 can drained Organic black beans
  • 1 can drained Organic corn
  • 1/2 cup mild salsa (optional)
  • 2 cups shredded Mexican blend cheese

Directions

  1. Cook the macaroni pasta according to direction on the package, drain and set aside. Reserve some pasta water.
  2. Saute the ground beef in avocado oil until cooked
  3. Add the taco seasoning and the rest of the seasonings and continue to mix.
  4. Add the beans, corn and 1 cup of the pasta water and the salsa and continue to cook
  5. Add the macaroni to the mix and simmer until cooked.
  6. Add the shredded cheese and serve after the cheese melts
  7. Garnish with Greek yogurt, more salsa, cheese and enjoy.
