Ingredients

1. 1 small rotisserie chicken

2. 1 large chopped yellow onion

3. 4 carrots chopped

4. 4 stalks celery chopped

5. 4 cloves of garlic or 1 Tbs garlic powder

6. 3/4 cup cilantro

7. 1/2 jalapeño minced

8. 2 32 oz organic chicken stock

9. 15 oz black beans (drained and rinsed)

10. 14 oz diced tomatoes

11. 1/2 cups fresh corn

12. 1 Tbs tomato paste

13. 1 tsp ground cumin, corriander

14. 1/2 tsp chili powder

 

Toppings: Avocao, cilantro, sour cream, Mexican cheese, sour cream, tortilla strips

 

 

Directions

1. Sauté chopped onions, celery, and carrots with salt/pepper

2. Once soft add the garlic, cilantro and jalapeno

3. Bring to a boil. Reduce to simmer

4. Add spices, tomato paste, diced tomatoes, beans and corn and continue to simmer for about 15 minutes.

5. Add the chicken and simmer 5 more minutes.
