Chinese Dumpling Filling

Ingredients

  • 1 pound ground chicken
  • 1 egg white
  • 2 slices ginger root
  • 1 clove garlic
  • 3 green onions (scallions)
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1 tablespoon oil

Directions

  1. Beat the egg white until frothy.  Peel ginger root and mince.  Smash, peel, and mince garlic. Slice the scallions diagonally into thin pieces.. Combine chicken, egg white, ginger root, garlic, scallions, sugar, cornstarch, soy sauce, salt and oil: mix throughly with your hands.
  2. Place the filling in a wonton and make fun shapes.
  3. You may steam the dumplings in a bamboo steamer or any other type of steamer.  You may cook a few at a time in a large pot of boiling water.
