Peanut Butter Granola Thins

Ingredients
- 2 cups old fashioned oats
- 1 tsp Ground Cinnamon
- 1/2 tsp Kosher Salt
- 1 Cup Creamy Peanut Butter
- 1/4 cup Honey
- 1/3 cup natural applesauce (no sugar added)
- 1 tsp vanilla extract (liquid)
- 1/4 cup roasted, salted peanuts, chopped
- 1/c cup chocolate chips (optional)
- 1/4 cup unsweetened coconut flakes
Directions
- In a medium mixing bowl, add oats, cinnamon, salt and stir until all the ingredients are combined.
- In another mixing bowl, mix the peanut butter, honey, applesauce and vanilla. Stir until well combined.
- Add the oat mixture, chopped peanuts, optional chocolate chips and coconut flakes into the peanut butter mixture and stir until you create a stiff batter.
- Line a baking sheet with parchment paper and add the mixture and spread evenly with a wooden spatula. Place another parchment paper over the mixture. Using your hands, pack the mixture down firmly to the desired thickness.
- Freeze the mixture for at least 2 hours to overnight. When ready, slice and wrap individually to be enjoyed.
