Taco-roni and cheese
Ingredients
- 1 pound elbow macaroni pasta
- 1 pound organic ground turkey
- 1 cup diced tomatoes
- 1/c taco seasoning
- 1/4 tsp of each: cumin, ground garlic, paprika
- 1 can drained Organic black beans
- 1 can drained Organic corn
- 1/2 cup mild salsa (optional)
- 2 cups shredded Mexican blend cheese
Directions
- Cook the macaroni pasta according to direction on the package, drain and set aside. Reserve some pasta water.
- Saute the ground beef in avocado oil until cooked
- Add the taco seasoning and the rest of the seasonings and continue to mix.
- Add the beans, corn and 1 cup of the pasta water and the salsa and continue to cook
- Add the macaroni to the mix and simmer until cooked.
- Add the shredded cheese and serve after the cheese melts
- Garnish with Greek yogurt, more salsa, cheese and enjoy.
